Hot & Sour Swiss Chard

Directions: Sautee in 1 tablespoon of coconut oil or olive oil: 1 small shallot chopped or 3 green onions or 1/2 white onion stems of a bundles of Swiss Chard chopped. Mix in a bit of sea salt and saute until soft. Chop Swiss Chard leaves and add to pan mix with sauted onion to wilt leaves. Remove to platter. 

Mix: 2 tablespoon apple cider vinegar, 2 tablespoon raw honey, 1 tablespoon organic tomato paste, and red pepper flakes (a pinch or two).
Add to hot pan and cook about 30 seconds until bubbly and thick - pour over green mixture and serve.

Ginger Bars

Ingredients: 1/2 cup coconut oil melted, 1 cup spelt flour, 1 cup whole wheat pastry or regular flour, 3/4 cup natural cane sugar (Florida Crystals), 1 teaspoon cinnamon, 3/4 teaspoon ground ginger, 1/2 teaspoon cloves, 1/2 teaspoon sea salt, 3/4 teaspoon natural vanilla, 2 teaspoons baking soda, 1/4 cup molasses, and 1 egg.

Directions: Heat oven to 375. Mix dry ingredients well. In a separate container, mix wet ingredients and add to dry. Press in greased 15 x 10 jelly roll pan and bake 11 to 13 minutes just until set. Don't overbake. Cool and cut.

Zucchini Slaw

Ingredients: 6 cups shredded zucchini, 1 medium onion thinly-sliced, 1/4 cup raw apple cider vinegar or brown rice vinegar, 2 tablespoons water, 2-3 teaspoons of honey or agave nectar or maple syrup B, 1/2 teaspoon Dijon (to taste), sea salt, sprinkle of red pepper flakes (to taste)

Directions: Mix together and marinate for at least 30 minutes at room temperature or refrigerate overnight. Serve cold or at room temperature. Use as a condiment on sandwiches; side dish or an appetizer served on sliced roma tomato rounds.

Boursin Cheese

Ingredients: 1 clove garlic; 8 ounce package cream cheese, room temperature; 1 stick (4 ounce) unsalted organic butter, room temperature; 1/4 teaspoon each basil, oregano, thyme (heaping measure of each or 1 teaspoon fresh.)

Directions: In food processor, pulse garlic to mince. Add cheese and butter; blend. Add herbs and blend well. Best made ahead to meld flavors. Keep refrigerated as long as the freshness date on the cream cheese. Use as a cracker spread, or on baked potatoes.

Appetizer Ideas:
1) Hollow out cherry tomatoes and fill; then garnish with fresh herbs.
2) Boil red potatoes just until done; cut in half and hollow out a bit; then fill with Boursin Cheese and garnish with fresh herbs.
3) Pipe into pitted dates and stuff with a pistachio nut.

Produce Wash

Ingredients: 1 cup of water; 1 cup of white vinegar; 1 tablespoon of baking soda; 20 drops of grapefruit seed extract.

Directions: Mix and store in a spray bottle. Spray Produce and let sit for 5 minutes. Rinse Well.
